Classic pesto given a new twist

The flavour queen, Sophie Hyam, offers up this quick and easy pesto which is packed full of flavour due to its use of coriander instead of the traditional basil. It can be kept in the fridge in an airtight container for up to 4 days.  Serve the pesto with pasta or for a real treat pair it with Sophie’s Hake recipe found here.
