The Classic Pairing of Avocado and Tomato for the perfect Brunch

We asked the very hungry greek to come up with something delicious and nutritious for brunch and she has really pulled it out of the bag.  She gives us two options to get our teeth into.

Not Just the Queen of Brunch

  1. 1. Boil an egg.  We prefer a 6 minute egg so that the yolk still has a bit of give.
  2. 2. Meanwhile toast the slices of bread. 
  3. 3. Load the slice of toast with half and avocado and the egg, quartered. Sprinkle with pepper and chilli flakes.
  4. 4. Load the second piece of toast with the other half of the avocado. Place some slices of the tomato on top and drizzle with olive oil and balsamic vinegar. Serve up for the perfect brunch.
