The Classic Pairing of Avocado and Tomato for the perfect Brunch
We asked the very hungry greek to come up with something delicious and nutritious for brunch and she has really pulled it out of the bag. She gives us two options to get our teeth into.
This recipe is both a treat for the eye as well as the palate. It showcases brilliantly some ingredients from Local Grocers’ partner Greenbean Sustainable Shopping.
Not Just the Queen of Brunch
Christina is an avid blogger of recipes that she describes as “not your average diet food”. Her Greek Cypriot heritage lends some sunshine to her creations. We are delighted to include many of her suggestions on our Recipe Page.
- 1. Boil an egg. We prefer a 6 minute egg so that the yolk still has a bit of give.
- 2. Meanwhile toast the slices of bread.
- 3. Load the slice of toast with half and avocado and the egg, quartered. Sprinkle with pepper and chilli flakes.
- 4. Load the second piece of toast with the other half of the avocado. Place some slices of the tomato on top and drizzle with olive oil and balsamic vinegar. Serve up for the perfect brunch.
