Sausage and Cherry Tomato Risotto – a new look at an old favourite

We can always rely on the very hungry Greek to create a flavour sensation. At 460 calories per serving this Sausage and Cherry Tomato Risotto is a delicious and hearty meal without being too sinful.

Christina is an avid blogger of recipes that she describes as “not your average diet food”. Her Greek Cypriot heritage lends some sunshine to her creations. We are thrilled with this risotto which showcases ingredients from Local Grocers’ partner Collins Fresh Produce.

“Who loves risotto but hates the faff?? My tried and tested recipe means the faff is long gone but it still turns out beautifully. For this, I really fancied a risotto with a twist! I had a few sausages spare, so made a really rich tomato sauce with a tiny punch of chilli. The flavour of the sausage meat goes sooo well with the tomato sauce! It has loads of hidden vegetables and works out as 3 out of your 5 a day! Plenty of the ingredients you’ll already have in the house too. I served mine with cheesy garlic bread but it was delicious by itself.”

Method

  1. 1. Lightly drizzle a large pan with the olive oil and cook sausage pieces, onions, red pepper and cherry tomatoes on a medium heat for 6-7mins.
  2. 2. Add a little more oil and stir in the risotto rice and fry for 3-4 mins until the rice starts becoming translucent. Then add the seasoning, passata, stock cube and water.
  3. 3. Stir well and leave to simmer on low for 20-25 mins or until all the stock has dissolved, stirring very occasionally and enjoy!
